Makes 1 large rectangular pizza or 2 12 inch round pizzas.

Ingredients:

  • 1 tablespoon active dry yeast
  • 1 cup warm water
  • 2 1/2 cups flour
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • 1 tablespoons olive oil

Preparation:

  1. In a cup, combine 1 tablespoon active dry yeast and 1 cup warm water. Allow to soak for a few minutes.
  2. Combine 2 1/2 cups flour, 1 teaspoon sugar and 1 teaspoon salt in food processor fitted with a steel blade.
  3. Pour in water and yeast mixture and add 1 tablespoons olive oil.
  4. Pulse processor until dough turns tough.
  5. Knead on lightly floured surface until smooth and elastic.
  6. Form dough into ball and place in greased bowl.
  7. Cover and let rise until doubled.
  8. Press dough on board or pull into shape: one large cookie sheet size rectangle or two 12 inch circles (or whatever shape you can imagine).
  9. Place on cornmeal dusted baking sheets.
  10. Top as desired and bake in a preheated 450 degree Fahrenheit oven for 15-25 minutes.
