Ingredients:

  • 1 tablespoon butter
  • 1 tablespoon olive oil
  • 2 boneless, skinless chicken breasts
  • Salt and freshly ground black pepper

Preparation:

  1. Rub 2 chicken breasts with a little salt and freshly ground black pepper.
  2. Place saute pan over medium heat.
  3. Add 1 tablespoon olive oil, 1 tablespoon butter and melt.
  4. Place in the pan and cook on one side until golden brown, about 4 to 6 minutes.
  5. Flip to other side and continue to cook until cooked through. Make sure that juices run clear when the chicken is cut, even in the center, and the middle should not be pink.
